This #ThrowbackThursday, it's also Christmas Eve AND National Eggnog Day! Many cultures have different ways of spicing up eggnog, but we decided to go for a healthy, low-fat, kid-friendly nog that the whole family can enjoy.

Healthy Homemade Eggnog

(adapted from The Gracious Pantry)

Ingredients:

  • 2 cups unsweetened milk alternative (soy, almond, or rice milk)
  • 3 egg whites
  • 1/3 cup honey or blackstrap molasses, xylitol, or other sugar substitute
  • 1 teaspoon vanilla
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon

Instructions:

  1. Add all ingredients to a blender and mix for 2-3 minutes.
  2. Pour the mixture into a sauce pan and warm over medium low heat for about 15 minutes; whisk constantly at the end so as to NOT let it boil.
  3. Remove pan from heat and let cool until it's cool enough to set in the fridge.
  4. Chill overnight.
  5. Blend with a whisk to make the eggnog a bit less thick; if it's too thick for your taste after a good whisking, add some extra milk bit by bit until you get it how you like it.
  6. Serve in festive mugs with a sprinkle of cinnamon and nutmeg on top for decoration!
