Welcome to #ScrumptiousSaturday! Making smart food choices is very often a real struggle- you know what I mean! You want to eat what tempts you and it's hard to say "no" when the healthy choices you have are not all that exciting. Well, what if you could be really tempted by something that's also good for you? Now you can, with this recipe for Chili-Garlic Roasted Broccoli! Everyone knows how good broccoli is for you, and when you prepare it this way it's the food you actually want to eat.

Chili-Garlic Roasted Broccoli

(adapted from Rachael Ray)

Ingredients:

  • 1/4 cup extra virgin olive oil
  • 5 to 6 cloves garlic, finely chopped
  • 1 tablespoon chili powder
  • 1 tablespoon grill seasoning blend (recommended:Montreal Steak Seasoning by McCormick Grill Mates)
  • 1 large head broccoli, cut into thin, long spears
Prep and cook time 30 minutes; yields 4 servings.

Instructions:

  1. Preheat oven to 425 degrees F.
  2. Place extra-virgin olive oil, garlic, chili powder and grill seasoning in the bottom of a large bowl and add the broccoli spears.
  3. Toss to coat broccoli evenly then transfer to a large nonstick baking sheet. Roast the broccoli until ends are crisp and brown and stalks are tender, 17 to 20 minutes.
